If you are on a keto journey like I am, I am sure you have ran into that issue where you just NEED something sweet and you NEED it NOW!

Do you crave chocolate?

Do you crave peanut butter?

Do you like Reece’s peanut butter cups? Yeah, who doesn’t, right?

This recipe is called Keto Fudge but don’t expect to have that old-fashioned Grandma style fudge. This is a creamy frozen concoction that many call fudge but really isn’t 🙂

Don’t get me wrong though… you won’t regret making this!

Keto Fudge – Keto Sweets – Keto Treat

Keto Peanut Butter Cup

Ingredients ( for the chocolate layer)

  1. 1 cup coconut oil, soft yet still solid

  2. ¼ cup [amazon_textlink asin=’B00AF7XMYY’ text=’full fat coconut milk’ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’234c4539-ec4c-11e7-a21a-9543738bc67d’]

  3. ¼ cup [amazon_textlink asin=’B00HES9CMS’ text=’organic cocoa powder’ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’f3954e13-ec4b-11e7-817f-d1835dc80b87′]

  4. ¼ c. [amazon_textlink asin=’B01LLMUG22′ text=’Swerve ‘ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’55fa0e58-ec4c-11e7-b832-d355488c8407′]confectioners (or a drop of stevia glycerite)

  5. OPTIONAL: 2 tablespoons unflavored Collagen

  6. 1 tsp vanilla extract

  7. ½ tsp almond extract

  8. ½ tsp [amazon_textlink asin=’B0078DP17Y’ text=’Celtic sea salt’ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’77e47593-ec4c-11e7-bb00-8b5db6f54977′]

Ingredients ( for the peanut butter layer)

  1. 1 cup coconut oil, soft yet still solid

  2. ¼ cup full fat coconut milk

  3. ¼ cup organic [amazon_textlink asin=’B01FYXCQ1S’ text=’PB2 powder’ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’9cb33804-ec4c-11e7-bb98-d949a51002a5′] (or other peanut butter powder)

  4. ¼ c. Swerve confectioners (or a drop of stevia glycerite)

  5. OPTIONAL: 2 tablespoons unflavored Collagen

  6. ½ tsp Celtic sea salt

Instructions (do once for chocolate layer, clean bowl and repeat for peanut butter layer)

  1. Place the coconut oil and coconut milk a medium-sized bowl and mix with a [amazon_textlink asin=’B00JR5AAQI’ text=’hand mixer ‘ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’bfe8966c-ec4c-11e7-ac14-0b4315280c86′]on high for 6 minutes or until well combined and glossy. TIP: I used my [amazon_textlink asin=’B00PYM7QEW’ text=’stand mixer’ template=’ProductLink’ store=’naturalwell0b-20′ marketplace=’US’ link_id=’d4005368-ec4c-11e7-af42-e395e289a86f’].

  2. Place the remaining ingredients in the bowl and stir on low speed until the cocoa is combined (so it doesn’t poof all over your kitchen). Increase speed and mix until everything is well combined. Taste the fudge and adjust to desired sweetness.

  3. Place a sheet of parchment or wax paper along the inside of a loaf pan. Spoon the fudge into the pan.

  4. Place the loaf pan in the freezer for at least 15 minutes, until just set.

  5. Use the edges of the parchment to pull the fudge out of the pan.

  6. Place on a cutting board and remove the parchment paper.

  7. Use a sharp knife to cut the fudge into squares.

  8. Store in an airtight container in the freezer; it will liquefy if you leave it in a warm area.
