Low Carb or Keto rolls that don't taste like cardboard

Prep Time: 15 minutes Cooking Time: 20 minutes Serves: 8

Ingredients:

  • 1½ cups low-moisture shredded mozzarella cheese

  • 2 ounces cream cheese, cubed

  • 1¼ cups almond flour

  • 3 tablespoons coconut flour

  • 1½ tablespoons baking powder

  • ¼ teaspoon salt

  • 3 large eggs

Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. In a medium saucepan, melt together the mozzarella and cream cheese over medium-low heat, stirring well to combine and avoid scorching.

  3. Meanwhile, in a small bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Set aside.

  4. Take the cheese mixture off the heat and cool slightly. It should be warm to the touch, but not bubbling hot.

  5. Add the cheese, 2 eggs, and flour mixture to the bowl of a food processor. Pulse in 10-second intervals until a uniform dough forms, about 60 seconds total. The dough will be extremely sticky.

  6. Transfer the dough to the freezer for 3-5 minutes to firm up.

  7. Remove the dough from the freezer. Lightly coat your hands with oil and divide dough into 8 equal parts.

  8. Roll each section between your hands to form a smooth, round ball, then place each on the prepared baking sheet about 2 inches apart.

  9. Whisk the remaining egg in a small bowl. Brush each roll with egg wash.

  10. Bake for 20-22 minutes or until golden brown.
