Low Carb - Keto Donuts ..... YES PLEASE!

CINNAMON SUGAR KETO DOUGHNUTS Prep Time: 10 minutes Cooking Time: 25 minutes Serves: 6

INGREDIENTS: Donuts

  • 1 cup extra-fine almond flour

  • 2 tablespoons coconut flour

  • ¼ cup granulated erythritol sweetener

  • 2 tablespoons monk fruit sweetener

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ cup salted butter, melted

  • ¼ cup heavy cream

  • 2 large eggs

  • ½ teaspoon vanilla extract

Cinnamon Coating

  • ½ cup granulated erythritol sweetener

  • 1 teaspoon cinnamon

  • 3 tablespoons butter, melted

INSTRUCTIONS:

  1. Preheat the oven to 350F. Grease a nonstick donut pan very well with nonstick spray, butter, or coconut oil.

  2. In a large bowl, mix together the almond flour, coconut flour, erythritol, monk fruit, baking powder, cinnamon, and nutmeg.

  3. In a small bowl, whisk together the melted butter, heavy cream, eggs, and vanilla extract.

  4. Stir the wet mixture into the dry mixture, mixing well and making sure there are no clumps or dry spots.

  5. Pour the batter evenly into each of the donut pan spaces, filling about ¾ full. Bake for 24-28 minutes or until a deep golden brown. The donuts should be visibly pulling away from the pan slightly at the edges and the center hole—don’t underbake! Note that silicone pans may need a little more baking time.

  6. Remove from the oven and allow to cool for at least 15 minutes before removing from the pan. To remove, run a butter knife around both the inside ring and the outside of the donut form, then gently remove the donut.

  7. Meanwhile, in a small bowl, whisk together the erythritol and cinnamon for the cinnamon coating.

  8. Transfer the cooled donuts to a plate or tray, Brush with melted butter, then dip in cinnamon coating, pressing to make sure the coating sticks. Enjoy!
